Во вторник, 13 декабря, на первом этаже «Башни на набережной» в Москва-сити прошло светское открытие ресторана азиатской кухни ASH — нового проекта команды Армена Фирджанова (ресторан tacobar и Кнорозов бар).
Шеф-повар проекта Дмитрий Кишов представил меню, позволяющее взглянуть на современную Азию по-новому. Он сделал акцент на копчении и специалитетах со всего азиатского континента — от Японии до Израиля. Гостей удивили азиатским совершенством, воплощенным не только в содержании блюда, но и в его форме: посуду разработал художник-керамист Евгений Гарин (Potterman Сeramics), в том числе, обжигая керамику в дровяной печи Анагама.
После ужина гости, среди которых были: Маша и Антон Янковские, Дарья и Эмиль Шабаевы, Евгения Милова, Маша Тё, Элен Нисанова, Катя Бутко, Галя Хаимова, Полина Звездина, Полина Надточий, Люба Лазарева, Маша Саух, Милана Пич, Екатерина Земская, Инна Комбарова, Абрей Образцов, Кирилл Караваев и другие продолжили знакомство с азиатским колоритом уже на уровне миксологии, за которую отвечает шеф-бармен Илья Пудовкин. Его бар как продолжение концепции кухни: в приготовлении коктейлей используется дым, копчение и азиатские специи.
Обволакивающее пространство ведет диалог с гостями о переплетении азиатских мотивов, ресторана и стрифуда. Арт-объект в виде уличного столба с запутанными электропроводами переносят в атмосферу улочек Азии. Гармоничное сочетание теплого дерева и камня в интерьере ASH наиболее полно отражают японскую культуру Ваби-Саби, красоту несовершенного и в то же время естественного, неподдельного.
О проекте: ASH — проект ресторатора Армена Фирджанова, известного широкой публике сетью бельгийских пивных ресторанов Lambic Brasserie, ресторана tacobar и Кнорозов бара. ASH — его третий концептуальный проект: в нем он попытался найти новые грани азиатской гастрономии и интерпретировать его вкусы и текстуры в формы, понятные столичным жителям.
