Российские ученые подтвердили безопасность сладкого белка

Результаты крупнейшего в мире исследования биотехнологического сладкого белка опубликовали Foods и Frontiers in Nutrition.

 

ГК «ЭФКО» представила результаты исследований безопасности сладкого белка браззеина, проведенного российскими научными коллективами ФГБУ ФНКЦ ФХМ им. Ю.М. Лопухина ФМБА России, НИИ ФХБ им. А.Н.Белозерского, МГМСУ им. А.И. Евдокимова, ООО НПЦ «Фармбиомед» и ранее опубликованных в Foods и Frontiers in Nutrition.

 

Сладкий белок – это пищевой ингредиент, который способен заменить сахар в привычных продуктах и предложить здоровую альтернативу людям, страдающим сахарным диабетом и следящим за уровнем потребления сахара, благодаря своим уникальным свойствам: сладкие белки в несколько тысяч раз слаще сахара, не вызывают инсулинового отклика и на вкус почти не отличимы от сахара.

 

Однако для того, чтобы ингредиент мог появиться на рынке, необходимо было подтвердить, что его употребление безопасно для здоровья человека и не несет долгосрочных негативных последствий.

 

В масштабном исследовании российские ученые выяснили, может ли навредить здоровью употребление сладких белков монеллина и браззеина. Для этого они оценили токсичность этих соединений для морских свинок, крыс и мышей. Результаты показали, что сладкие белки не вызвали патологических изменений в легких, печени, сердце, почках, головном мозге, тонкой кишке, желудке, толстой кишке, яичниках и семенниках. Кроме того, животные не продемонстрировали признаков интоксикации и увеличения веса. Также соединения не обладают аллергенными или мутагенными свойствами.

 

«Переизбыток сахара вредит не только внешности – возрастает риск развития неинфекционных заболеваний. Мы с коллегами исследовали сладкие белки, которые могут стать безопасной для здоровья альтернативой сахару, – говорит Мария Лагарькова, директор Федерального научно-клинического центра Физико-химической медицины им. Лопухина. – Сладкие белки первоначально были выделены из дикорастущих тропических фруктов. Один из них – тауматин – уже внедрен в пищевую промышленность в нескольких странах. Сейчас изучаются два других рекомбинантных белка: монелин и браззеин. В рамках исследования нам удалось подтвердить, что эти белки не обладают токсичностью, мутагенностью, онкогенностью, не дают аллергенных эффектов и не вызывают значимого изменения состава микробиоты по сравнению с контрольной группой. При этом у группы животных, получавших сахарозу, отмечено увеличение представленности Faecalibaculum rodentium – бактерии, ассоциированной с ожирением».

Ранее российская технология получения сладкого белка была сертифицирована в ОАЭ. Теперь, после получения результатов исследований, ученые считают, что в России также открыты широкие возможности для внедрения браззеина в качестве полезной альтернативы сахару.

 

«Для нас безопасность сладких белков имеет ключевое значение. Поэтому мы и изначально закладывали такой подход к исследованиям, который даже превышает требования для сертификации. Рады, что результаты подтвердили высокий уровень безопасности, — говорит Ростислав Ковалевский, директор по инновациям ГК «ЭФКО», которая разработала технологию получения браззеина. – Сейчас на завершающей стадии находятся клинические исследования на людях, предварительные результаты также говорят о безопасности сладкого белка. Теперь мы не видим никаких препятствий для сертификации продукта в России и ожидаем ее в ближайшее время».
